This is not even CLOSE to the first time I’ve shared these – seriously I make these cookies for like every party! Always the same recipe, it’s easy to make and tastes great! So here are my Christmas cookies with a VIDEO! YAY! Videos are such a great way to show techniques like frosting cookies!

It’s all about getting the texture right! at first the frosting is thick – good for spreading with a knife – more grocery store style and GREAT for kids! Thin it down a little for a still thickish icing you can pipe but holds it’s shape – great for outlines and details! Finally thin it enough that it self smooths! perfect for a great base, swirling and stripes!

Now this isn’t royal icing – so while it crusts over and gets fairly hard it will still crush – BUT it tastes so much better than royal icing! so as long as you don’t need them to be rock hard this is a great option! if your going to add sprinkles do it when the icing is still fresh and wet and before it crusts over.

Now I use this dough year round – with the nutmeg – and love it, it holds it shape great so I can get a lot of detail in my cookies. The icing I prefer peppermint but SOME people don’t like peppermint year round (crazy) so you can always switch up the flavor – almond is another classic option! but really you could do anything!

I tried to make this icing and it came out with a grainy texture. Help! What did I do wrong? Thanks!

    • Ashlee Marie

because it uses powdered sugar there shouldn’t be any graininess. I wouldn’t know where that would come from unless the powdered sugar was a bad batch?

Canthis be made ahead of time and frozen for use later?

you can freeze the dough, just let it come to refrigerator temp before rolling out.

Made these cookies yesterday with a different royal icing recipe. They were very easy to roll out (something I’ve had trouble with in the past using other recipes), and tasted good. However, I will say that if anyone is not a fan of a slight anise or licorice taste, I’d suggest leaving the nutmeg out and putting in a few more teaspoons of vanilla. I tend to like more sweet/vanilla tasting cookies, so I think I may tweak the recipe next time. Overall, nice consistency and easy to make, though! Thank you!

I’m making cookie decorating kits so I don’t want to worry about the icing needing to be refrigerated since once they leave me it will be out of my hands how they are stored… what would you recommend for this icing? Replace the milk with water? Typically I would do a royal icing but want to make it more kid friendly and your recipe looks amazing!

you can totally just use water.

Would the doe be good if chilled over nite?

    Reply

    • Ashlee Marie

you need to chill the dough a minimum of 4 hours but overnight is just fine

Can you make this icing ahead? If so how long ahead?

    Reply

    • Ashlee Marie

if you make it ahead of time you’ll need to keep it covered with plastic right down on top touching the icing. or keep the icing in sealed bags until you use them.

  9. Cindy

Hi Aslee Thanks for your recipe but I have to ask is that 1 or 2 eggs? Your printed recipe ays 2 but your video has one? Thanks Happy holidays Cindy

I made a half batch in the video

  10. Lisa

Will there much of a difference if I roll, cut then chill?
    Thanks

    Reply

    • Ashlee Marie

yes, they need to chill so the dough firms up enough to roll the dough out. It’s too wet to roll out when the dough is first finished. You can chill both times, but you do have to chill before rolling out.

  11. Kate

Can the frosting sit out after it’s made?

    Reply

    • Ashlee Marie

It will crust over if you leave it out, but it’s safe to leave out if that’s what your asking.

  12. Cynthia

Help! I Just finally made the icing but my Aspie teen is upset that the icing is yellowish due to the 1 1/2 tsp of vanilla extract and the snowmen, candy canes and some parts of the Santa, Angel and snowflakes will not be a true white. Is there any way to brighten it now, at home? WITHOUT trying to find white food color so.close to.Xmas and then running out? Thanks!

    • Ashlee Marie

I’m so sorry, I add vanilla and butter and never had a problem with the icing not being white! We just made a batch of cookies last week and I was curious about your comment but the icing was totally white to me! gah, I am so sorry. in the future white gel dye or clear vanilla.

FAQs

What tips are best for cookie decorating? ›

Outlining-consistency icing should squeeze easily out of a #2 pastry tip, stay in place, and hold its shape on the cookie when it lands. If the icing is too stiff, it will be hard to squeeze. If it is too loose, it will spread a little when it lands on the cookie—this won't help when you start flooding.

Do you decorate sugar cookies before or after the oven? ›

For this technique, you'll want to decorate your cookies before baking. We recommend using decorative sugar (also known as colored sanding sugar), Turbinado sugar (coarse golden sugar) or pearl sugar (coarse clear sugar). It all sounds super fancy but it's really very easy!

How to attach icing to sugar cookies? ›

Decorate your sugar cookies by first outlining the border, then filling in the middle with flood icing which should settle into itself. Use a toothpick or scribe tool to fill in any gaps by spreading the icing around, then tap the cookie on the counter a few times to help the icing settle into a smooth, even layer.

What is the easiest way to decorate sugar cookies? ›

My favorite way to decorate sugar cookies—especially for holidays and special occasions—is by using royal icing. The secret to getting precise lines, dots, and other details with royal icing is using a squeeze bottle.

How long to let cookies sit before icing? ›

Allow cookies to cool on the baking sheet for 5 minutes then transfer to a wire rack to cool completely before decorating. I like to decorate cookies directly on baking sheets so I can stick the entire baking sheet in the refrigerator to help set the icing. So place the cooled cookies back on baking sheets.

What is the best piping set for cookies? ›

Recommended Piping Tips

Wilton #1 & Wilton #2 are thin and excellent for piping detail, like the jack-o-lantern faces on these Halloween cookies. Wilton #3, Wilton #4, and Wilton #5 are larger and easier to work with.

How to get perfect royal icing consistency? ›

To achieve flood consistency, start with stiff icing and add a couple of tablespoons of water at a time. To test it, take a spoonful of icing and drop it back into the bowl. It should take between 15-20 seconds for the icing to smooth itself out. This is known as 15 or 20-second count royal icing.

When to add sprinkles to royal icing? ›

It's easiest to add sprinkles before the icing dries so they will stick to the cookies easier.

Can I sprinkle colored sugar on cookies before baking? ›

Decorate Before Baking

Place 1/4 cup (2 oz.) of granulated sugar into a small, zipper top baggie. Add 3 to 4 drops of food color of your choice. Zip the top closed, and shake the bag around to distribute the color.

Why poke holes in sugar cookies? ›

The holes trick

There's also a new technique going around when preventing craters in a second layer of icing: poke holes in the base flood (under the area you'll cover with a second layer of icing). You can even do this when the first layer flood has completely dried!

What type of frosting is best for cookie decorating? ›

Royal icing creates clean lines and takes on color to create a vibrant look. It also works for detailed piping and decorating, when you want to make a gingerbread house or small designs.

How to ice sugar cookies perfectly? ›

Draw the borders around the cookies with border icing.

Begin with the border icing and trace the outline of each cookie with icing. Hold the bottle vertical with the tip of the bottle slightly above the cookie. Squeeze gently and with consistent pressure so the border is the same width all the way around.

How to ice Christmas cookies for beginners? ›

For this technique, outline and flood the cookie with whatever color icing you prefer. Working with a secondary color, hold the piping bag perpendicular to the cookie, with the tip just barely above the surface of the icing. Squeeze gently until the icing begins to flow, and keep squeezing to enlarge the dot.

What do people use to decorate sugar cookies? ›

One of our all-time favorite ways to decorate sugar cookies is by flooding them with royal icing. Want to try the technique for yourself? Start by baking up a batch of Food Network Magazine's basic sugar cookies and making around 2 1/4 cups worth of basic royal icing.

How do you display sugar cookies at a party? ›

You can never go wrong with layering your cookies on a simple plate or board! Most of the time, especially when I just bake up one batch of cookies, I will display the cookies on a serving plate, raised stand, or a domed serving plate. One of the new trends floating around on social media is a cookie board!

What is the easiest way to decorate cookies? ›

Use Squeeze Bottles to Decorate Cookies with Icing

I find that squeeze bottles work just as well for decorating and are easier for us non-pro bakers to work with. Plus, they're easy to clean! My favorites are little eight-ounce squeeze bottles that you can find at Michael's and other craft stores.

How to decorate sugar cookies without piping bag? ›

The Basic Dip

Hold a sugar cookie by the sides, then dip the top of the cookie in the royal icing. Lift the cookie from the icing and gently shake away the excess. That's it! (You could use a spatula or knife to spread the icing out, but it's really not necessary.)
