well many would have this confusion or curious about the difference between a kulcha and naan recipe. to be honest, i only a few dot points and i would like to highlight those here. firstly the main difference is the use of baking powder/soda vs yeast. naan uses yeast to get the fermentation process whereas baking powder is used for the same purpose. the second main difference is the use of tandoor vs tawa. naan is particularly made in tandoor whereas kulcha can be made in an oven or tawa. hence kulcha is more popularly made at home and served for lunch and dinner. having said that, you may also use tawa to prepare naan but tandoor is the traditional way. the last but not significant difference is the shape. kulcha can be round like roti whereas naan is generally made like an oval. this is not critical for the taste but just practice.

Ingredients

for dough:

  • 3 cup maida
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ cup curd
  • water, for kneading
  • 2 tbsp oil

for onion toppings:

  • 1 onion, finely chopped
  • 2 tbsp coriander, finely chopped
  • ½ tsp cumin powder
  • ½ tsp chilli powder
  • ½ tsp garam masala
  • ½ tsp salt
  • ½ tsp chaat masala

Instructions

  • firstly, in a large bowl take3 cup maida, 1 tsp baking powder, ¼ tsp baking soda and ½ tsp salt. mix well.

  • now add½ cup curd and combined well.

  • adding water as required to knead the dough.

  • knead for 5 minutes forming a soft dough.

  • now add 2 tbsp oil and continue to knead.

  • knead to a smooth and soft dough. tuck the dough making sure all the sides are smooth.

  • cover and rest for 2 hours.

  • meanwhile prepare the onion toppings, in a small bowl take1 onion.

  • add2 tbsp coriander, ½ tsp cumin powder, ½ tsp chilli powder, ½ tsp garam masala, ½ tsp salt and ½ tsp chaat masala.

  • mix well making sure all the spices are well combined. keep aside.

  • after the dough has rested for 2 hours, knead the dough slightly.

  • pinch a large ball sized dough and roll.

  • dust the maida and roll to an oval shape with a slightly thick thickness.

  • spread onion topping and press gently.

  • place a butter paper, and roll making sure the onions stick to the dough.

  • flip over and now spread a tbsp of water. this helps to stick the kulcha on tawa.

  • now transfer the rolled kulcha on hot tawa (waterside facing the tawa)

  • press gently, helping the kulcha to stick to the tawa.

  • cook for a minute, or until a couple of bubbles appear and the base is cooked well.

  • now flip over and keep over the flame. this gives the tandoor effect helping the kulcha to cook like in tandoor.

  • scrape the sides and brush butter over the kulcha before serving.

  • finally, onion kulcha recipe tastes great when served with paneer curry.
